Ginger-Sauteed Green Beans

One of my favorite veggies is Green Beans, and as a mom this is one of my go-to kid-friendly vegetable recipes. It is also so versatile ;the green beans can stand alone as a meal, or you can eat them over a bed of rice or make the beans themselves a bed for a meat dish!

I must credit my wonderful stepmother for this recipe, because I learned it while growing up as her kitchen apprentice! Jazakillahu khairan!

​So here it is....
Ginger-Sauteed Green Beans

Ingredients:

3 TBS Tallow or Ghee (or other high-heat tolerant oil)
1 ½ to 2 lbs of Green Beans (preferably organic)
3 Large Garlic Cloves, chopped
2 Medium Tomatoes
1 ½ TBS Ground Ginger
½ tsp Ground Black Pepper
Salt (to taste)
2 Cups Water

Method:
  1. Using a wok or large pan over a medium-high heat, heat the oil you are going to cook with.
  2. Place chopped garlic in the oil for about 10-15 seconds, then throw in the cleaned and washed green beans.
  3. Stir the green beans and add salt, pepper and ginger. Stir continuously to avoid spices and garlic sticking to the bottom of the wok.
  4. Next, cut your tomatoes into large squares and add to the green beans. Stir for another minute.
  5. Add water and cover.
  6. After 10 minutes, check the water level in the wok. If the water is evaporating quickly, reduce the heat slightly and add ½ cup of water.
  7. After another 10 minutes, check to see if the green beans are done. If they are tender, turn off the heat.
  8. Serve the green beans as a side-dish or over a bed of rice.
  9. Say Bismillah and enjoy!

Heat the oil/ghee/tallow and saute the chopped garlic for about 20 seconds (try not to let it burn!)

Add your washed, clean and tried green beans to the wok. Stir around to get all of that yummy garlicy flavor infused in the beans!

Add the salt, pepper and ground ginger. Be sure to give it a good stir!

Add the chopped tomatoes and stir. Allow tomatoes to cook for about 2 minutes.

Add water to the middle of the wok.

Cover and allow to simmer for about 15 minutes. Check after 7 minutes to make sure there is still water in the bottom of the pan. If need be, add another cup of water.

Green beans are done when they are tender, but not mushy. And the sauce is deeeelicious, mashaAllah!

Serve as a bed to a meat dish. (This is moroccan style tajine lamb, and the spices go well with the green beans)

Or just serve on a bed of rice, as-is!
